Contrary to popular belief, according to a study by the University of Alberta, one of nature’s most perfect foods is better for us than previously thought.  High-quality eggs are rich in proteins, lipids, vitamins A and D and minerals.  They also contain choline which plays an important role in mental acuity.  Choline exists in all living cells.  Studies also show higher choline intake to be linked to a decreased heart disease risk.
